Herb-Roasted Potatoes

Makes 6 servings

Prep 15 min  Bake 20 min

 

Small new potatoes and low-starch potatoes, such as Red Bliss and Yukon gold, are best for roasting.

 

2 pounds new potatoes (cut in half)

1/4 cup olive oil

2 garlic cloves, pressed

1 teaspoon salt

1 teaspoon ground cumin

1/2 teaspoon paprika

1/4 teaspoon dried oregano

1/8 teaspoon ground red pepper

 

TOSS together all ingredients in a large bowl; spread mixture in a single layer

in a lightly greased, aluminum foil-lined 13 X 9 inch baking dish.

BAKE at 425 degrees for 20 min or until tender.
